Vanilla Wafers

Cream at medium speed for approximately 5 minutes – scrape bowl often:

     ·4 lbs 12 ozs sugar

     ·1 lb 8 ozs butter

     ·10 ozs nonfat dry milk

     ·3/4 oz butter vanilla flavor

     ·1/2 oz salt

Add gradually and cream at medium speed for 2 minutes:

     ·13 ozs whole eggs

Dissolve, add and gradually, and mix lightly:

     ·2 lbs 12 ozs water (cold)

     ·3/4 oz ammonia

     ·3/4 oz soda

Add and mix in lightly by hand:

     ·6 lbs 2 ozs Perfection Cake Flour

Drop through a canvas bag the size of a 25-cent piece on paper liners and bake at 415 - 425 ºF.
