     ·12 lbs 8 oz Koerner's Pride Flour

     ·1 gal water

     ·4 ozs salt

     ·8 ozs sugar

     ·8 ozs Koerner Blue Label Shortening

     ·1 lb nonfat milk solids

     ·1 lb soy flour

     ·4 ozs wheat germ

     ·1 lb yeast

Mix dough to full development and allow to rest for 1 hour and 30 minutes. Scale 18oz. And round up. Let round pieces rest for 15 minutes. Make up and proof for 55 to 60 minutes. Bake at 400ºF.
