Wine Cake (Old Fashioned)

     ·5 lbs 6 ozs Big Chief Flour

     ·1 1/2 oz salt

     ·7 1/2 ozs sugar

     ·6 ozs Koerner Blue Lable Shortening

     ·1/2 oz lemon flavor

     ·1/2 oz vanilla flavor

     ·3 pts water (80ºF)

     ·6 ozs yeast

     ·1 qrt whole eggs

Scale all ingredients into the mixing bowl, mix for three minutes on low speed and eight to ten minutes on high speed. Dough should be well mixed—drop round pieces into WINE CAKE molds and give half proof. Bake at 375ºF.

     ·SYRUP

     ·4 lbs sugar

     ·1 gal water

Heat water and sugar to 190ºF. Add:

     ·1/2 oz Koerner's Wine Cake Flavor
