Oatmeal Cookies

Cream 4 minutes at low speed:

     ·14 lbs sugar

     ·6 lbs 8 ozs Koerner Blue Label Shortening

     ·4 ozs salt

     ·4 ozs cinnamon

     ·12 ozs nonfat dry milk

Add and mix 1 minute at low speed:

     ·3 ozs lemon emulsion

     ·2 lbs ground raisins

Add Eggs slowing while mixing. Dissolve soda in water and add to mix:

     ·2 lbs 8 ozs whole eggs

     ·2 lbs water (cold)

     ·4 ozs soda

Scrape bowl and add mix 3 minutes low speed:

     ·5 lbs 8 ozs rolled oats

     ·16 lbs White Spray Flour
