| Description | Acid that is extracted from citrus juice or from fermentations. It is used in jams, marmalades, gels and fruit pastes to optimize gelation. Also to reduce the browning of fruits and vegetables, provide acidity, obtain inverted sugar, etc. How to use: Incorporate into the product, either in a solid state directly or diluted in water. Usual doses: 2-8 gr./kg. of product.
