Sodium Bicarbonate is a clean label chemical leavener, also referred to as baking soda.

Provides a clean label source of leavening
Hydrates quickly in low moisture and frozen dough products
Provides a source of carbon dioxide when used in conjunction with acidifying agents
Controls the flavor and color of the end baked product
Controls pH levels in the dough and baked product
Meets Food Chemical Codex (FCC) and USP standards

APPLICATIONS & USAGE: Recommended for use in all chemically leavened baked and frozen products including biscuits, cookies, crackers, pretzels, baking powders, self rising flours, and prepared cake mixes.

Suggested usage levels based on 100-lbs. flour are:

Cookies 0.25 - 2.0%.
Crackers 0.50 - 2.0%
