Vital wheat gluten when added to yeast bread recipes improves the texture and elasticity of the dough.  It helps retain the gas and steam during baking, giving the bread more volume.

Vital wheat gluten can also be used as a binder for things like burgers, both veggie and meat, meatballs and meatloaf.

Vital wheat gluten is also the primary ingredient in seitan.  Seitan is a meat substitute that is very popular with vegetarians.

To make seitan, you simply combine vital wheat gluten with spices and add water to form a dough.  Once you cook the dough it's texture is very similar to meat.
