Surfax is an all vegetable based emulsifier designed for
use in all cake batters (except angel food cakes).
Surfax increases volume, tenderness and shelf life.

 

Usage
Sponge Cakes: 2.5 - 3.0%
Chiffon Cakes: 2.5 - 3.0%
Pound Cakes: 0.5 - 1.0%
Layer Cakes: 1.5 - 2.0%
Cookies: 0.25 - 0.75%
(Formula % usage level based on flour weight.)
